Yesterday evening, we watched the programme about pies. Today, an urge came upon us to make one of our own.
I made the filling, and Lady S constructed the puff-pastry crust. Ours was a creamy fish pie. The sauce was essentially a velouté into which I blended a fair amount of cooked pollock, some herbes de provence, and considerable quantities of garlic and saffron. This sauce was then poured onto diced Atlantic Cod and some prawns in the bottom of a Le Creuset pie dish, and the whole covered with the pastry and baked in the oven.
"... and when the pie was opened"
Delicious! And some Alsace Riesling washed it down very nicely.
