Frosty Morning and Peppered Hare
Woke to a frosty -5 degrees today but it was bright and sunny. I took a few shots of the frost covered hedge opposite our house but it was difficult in the bright sunshine. We took our guests to the local baths/sauna for 4 hours then the rest of the day flew by cooking dinner.
Menu: Hasenpfeffer (Peppered Hare) with Potato dumplings. The hare is jointed then browned in a pan. Root vegetables are browned in the same pain, the hare added then a red wine reduction made. Stock, juniper berries, bay leaf, white peppercorns are added then it is cooked for 1 3/4 hours. The hare is removed then the vegetables and stock are blended then passed through a sieve. The sauce is thickened with flour but in the traditional recipe hare´s blood was used to thicken.
Dessert was a pavlova roulade filled with mascopone cream and mango.
