A knight

I found him set into the one of the walls above a doorway in the Cross Kirk in Peebles. This building dates back to the 13th Century and was first a church, then a monastery, then after the Reformation a parish church and finally ended up as a burial aisle. It's now in the care of Historic Scotland. More pictures can be seen here. Sadly I have been unable thus far to discover who is knight might represent but please note he is wearing the Saltire around his nect.
