Eggplant Parmigiana

After a 9h day at work, came home and whipped up this eggplant parmigiana from Jamie's Italy. Love this recipe. Super easy and delicious - didn't cut my finger on the can of tomatoes...

This was my best go at this recipe - probably adding ricotta helped out.
