Chef Juan Solano is preparing the opening offering in a seven course wine dinner. That is Juan in the toque from the back sticking a pan of fresh mozzarella di bufala, tomato with caramelized onion pesto on filo rounds for some heating. Then on to sausage and kale soup, watercress salad, sea bass wrapped in prosciutto on a melange of root vegetables, chicken saltimbocca, limoncello ice, pork Milanese (Andy - this was accompanied by the superb Masi Amarone) and cannelloni filled with Napoleon custard, blackberry panna cotta, and pears poached with red wine and mint. All with appropriate wines from the Masi Group including some of their recent vintage in Argentina.
