Lemon Cheesecake Cupcakes
Last week bake fest of Lemon Cupcake Cheesecakes was blipped by my lovely daughter
This week I did it myself. It was a close run choice between this and this, but Babymuppet spotted it all on the kitchen table and was struck by the blipportunity, only to be thwarted by two things, her camera battery was flat and I almost already blipped it!
So as the kind caring mother I facebooked my daffys and she will showcase them on blip later!
Anyway, back to the cupcakes...what the picture doesn't show is the crushed gingernut base and you will have to imagine the homemade lemon curd splidge within the cake.

Crush 6 gingernut biscuits and divide into 12 muffin papers in muffin tins
Mix 4.5oz SRflour, 4oz caster sugar, 1tsp baking power, 2 tbs ground almonds, 3 oz mayonnaise, 4fl oz water, juice of half a lemon.
Half fill muffin papers, add a dod of lemon curd, and cover with remaining mix. Bake in med hot oven for 15 mins.
Frosting was 2oz butter, 4 tbs icing sugar, and half a 300g pack of philly, squizz of lemon, beat all together but it'll need to go into fridge to firm before piping or spreading.
