Many Chefs Spoil the Photographer
Class at Riverside Catering. I went to pick-up a sample chocolate shell for a party. Fortunately, I know the owner. They happened to be doing a class (timing is everything) sooooo I got to taste. The fried avocado (slightly unripe avocado is the secret if you don't want your slices to turn to mush in the pan fry process) with aioli jalapeno mayonnaise. Grape truffles (fresh grapes rolled in dark chocolate and chopped Brazil nuts). Pork tenderloin in apricot marinade. Shrimp in orange zest and and ground almonds. Sadly, I couldn't stick around for dessert.
