Day 1 - Sausage Casserole and Cheesy Garlic Toast

COOK - 40 minutes
* 12 sausages
* 2 peppers, cut lengthway into medium strips (I prefer red and yellow)
* 1 large onion cut into fine strips
* 2 x 400g tin of plum tomatoes (our lot like a lot of sauce)
* Large mug of passata (optional)
* 1 tbsp brown sugar
* 300ml hot vegetable stock
* 1 tbsp dried thyme
* Ground pepper to taste
* Splash of Worcestershire sauce (optional)
Pre-heat oven to 220C / fan 200C / Gas mark 7
Put the chopped onion, pepper and sausages into a large roasting tin and roast for 20 minutes.
Lower oven temperature to 200C / fan 180C / Gas mark 6
Add the tomatoes, stock and passata if being used into the roaster. Add the thyme, sugar and other seasonings, including the Worcestershire sauce if using. Stir well. Make sure the sausages are turned browned side down.
Roast for 20 minutes.
Serve.
(Note: I served this with pasta and Cheesy Garlic Toast)

Cheesy Garlic Toast
* 400g bloomer, cut into thin slices
* 1 heaped tbsp butter
* 2 tbsp cream cheese (I like to use low-fat Mascarpone)
* 2 crushed garlic cloves
* 1 tsp dried sage
Mix the butter, cheese, garlic and sage really well
Lightly toast the bread slices on each side
Spread one side of each toasted slice with the butter mix and grill lightly
Serve

The cost of this meal was £5.95 plus the pasta, which was approx 75p for the amount I used.
