Healthy Pot Noodles?
A friend of mine mentioned these homemade Pot Noodles to me, which she had seen on River Cottage this weekend.
They are a healthy alternative to the pot noodles and I had one for my lunch today. I just prepared another one for my lunch tomorrow! All I need to do tomorrow morning is the tomato passata and then add hot water at lunch time. if you would like to try:
Ingredients:
1 nest of standard, thin, quick-cook egg noodles
About 30g chorizo, chopped
3-4 spring onions, finely sliced
½ tsp fennel seeds, lightly crushed
100ml tomato passata
3-4 shredded basil leaves
Salt and freshly ground black pepper
How to make chorizo and tomato instant noodles
Put the chorizo, onions and fennel in the pot with the noodles. Season the passata well, add the basil, and put in a small jar separately I just added it in the morning. When ready to eat, pour boiling water over the noodles to just cover, add the passata and leave for 5-6 minutes. Stir and eat. Bon Apetito!
