Itamae Focus

Tonight's cooking class was sushi with Benny Osaka. I have known Benny for many years. He has been a sushi chef since the 70's in Tokyo. Then Miami, then Winter Park (Florida - where I became acquainted with him), and New Smyrna Beach where we now both live. Lucky me!! He "retired" to the beach and opened Shiki. His technique and presentation are disciplined and graceful. I have never had more inspired sushi.
