Royal wedding day cakes

We watched the ceremony
On T V
Saw a couple that we actually know
Amongst the guests in the Abbey!
Son + friends joined in street celebrations in Clapham
Daughter and I made lemon curd cakes
A right royal treat!

Whisk 2 yolks & 75g sugar in a pan on medium heat till sugar melted
Add 50g butters & juice + zest of 2 lemons
Keep stirring for 5mins
Cool & add 100g mascarpone
Fill / decorate your sponge cakes
