Strawberry Cake

After work I baked a double layer cake to take over to our friend's house tomorrow night. Strawberries are on sale and I bought a flat (6 baskets) for only a few dollars.

I used the Strawberry Dream Cake recipe with a few modifications.

I was worried about the icing since some of the reviews were negative about it but I attempted it anyway and I'm so glad I did - it turned out AMAZING. I think the trick is to melt the cream cheese and white chocolate together with the heavy whipping cream and then refridgerating it over night before mixing it with the cool whip. I didn't have any problems with it being too runny.
