Ladies & gentlemen I give you aubergine & lentil curry with garlic nan
Edit;
1 onion chopped
2 crushed garlic cloves
2tbsp medium curry powder
1 aundergine diced
175/6oz dried red lentils
600ml/1 pt veg stock
1/2 tsp salt
100ml/3.5 fl oz fat-free coconut mil
chopped fresh coriander
soften onion & garlic, stir in curry powder cook out for 1 min
add aubergine, lentils and stock, bring to boil, then simmer uncoveed 30 mins - needs regular stirring to stop it sticking.
once lentils tender & mushy add salt coconut milk & coriander, heat through
