Poor Man's Lunch
On this day, when my larder was near empty, I improvised a reasonable mid-day meal. I opened a can of hominy (steam-pealed, cracked white corn, traditional in the American South), heated it, and mixed in olive oil for lack of butter. Next I opened my last can of laverbread (the trademark seaweed of Wales) and mixed it with oats, which I ground in my coffee grinder, since oats are never available as powder in the USA, and pan-seared the patties in olive oil for lack of bacon. Having no coffee, I made up a simple batch of iced tea that was bought in Wales; probably grown in India.
The meal was both nourishing and filling, but pregnant with missing parts. I was reminded of all these places I've mentioned, all of which I have known very well. Many faces and missing voices wandered through my mind as I ate.
