So, this year instead of making elderflower champagne as I did last year, I'm attempting to make elderflower cordial. You could do it too, you know.
All you need to do is pick about 20 elderflower heads, rinse them thoroughly to get rid of all the bugs, boil up 1.5 litres of water and add 1.5 kg of sugar, stirring until it is all dissolved, take the peel off two lemons, and add it to the large bowl with the elderflower heads in, slice the lemons and put the slices in the bowl too, along with a generous slug of white vinegar (about half a cup). Once the sugar is dissolved, pour the solution over the elderflower and lemon, cover and leave for 24 hours, before bottling.
Go on, you know you want to!
