Last night's dinner:
fusilli on a bed of sauteed mushrooms, leeks, garlic, and spinach topped with a pesto of sundried tomatos, walnuts, edamames, pepper, garlic and fresh herbs from the garden. Topped with crushed toasted pink peppercorns and a dash of aged balsamic vinegar.
Lots of ingredients but yummy nonetheless.
