Lechon "eyeball"

Bamboo torches lined along the driveway led us to the lovely garden of a known Filipino food blogger, MarketManila. Set atop a hill overlooking Cebu city, a Lechon "eyeball" was attended by guests from various places. There were those who flew in and some who drove inter-island just to be part of this experience. Lechon is roasted pig to us and tonight, five different versions were served to and tasted by the guests. Alongside was a salad made of seaweed so fresh you could still smell the sea. At the other side of the garden were two huge paelleras simmering over hot coals. A 3-foot long Tuna fish, caught just a few hours earlier, was sitting on top a bed of ice, just waiting to be sliced and carved into "kinilaw", our version of ceviche.

Talk throughout the entire night was mostly about food and it's relations. It was a great evening full of wonderful people who got together with but one goal in mind, to eat Lechon.
