Ice cream Sandwich--Thai Style

In Thailand, ice cream sandwiches come on hotdog buns. The ice cream is coconut with small squiggles of green jello stuff in it. The ice cream is sprinkled with peanuts and drizzled with milk from a can. A great snack!

Tomorrow's the big day! Some of the students are going to the airport with me tonight to see me off. Still need to finish packing and saying good byes. I would be a lot more sad if I wasn't coming back. The 6 weeks will go by fast, and I'll be back to eating coconut ice cream in no time. :)
