According to the official website this is the 'Most Picturesque Street in Britain'.
"Shambles" is an obsolete term for an open-air slaughterhouse and meat market. This is where butchers killed and dressed animals for consumption. As recently as 1872 there were twenty-five butchers' shops in the street but now there are none. (Wikipedia)
I thought their would be more of the overhanging timber-framed buildings.
