Guacamole
This is part of the salmon starter dish. To stop it from going grey I keep the stones in it and it stays green for a few days.
I'm still a bit buzzing from yesterday! Can't believe I'm going to be in the good food guide. Now all I need is to be back in the Michelin guide and it's all complete again!
