Jam
oh my, the whole house smells like Christmas, this is no ordinary plum jam, this is Mulled Wine Plum Jam, hence the bottle of vino in the background
4lbs plums (bought or stolen)
4 lbs sugar
half a bottle of red
assorted mulled wine spices (cloves, nutmeg, cinnamon stick)
2 oranges or similar (I used 4 satsumas)
Stone plums, quarter and squeeze the oranges, leave peely bits in with the plums, add the wine and simmer gently till the plum skins are soft.
Add the sugar, bring to a brisk boil, check for a set from about 15 minutes, or use a jam thermometer.
Pot into jars and cover, remember to pick out the peely bits, and twiggy bits of spice.
