Good Friday
It was the second day of the new apprentice. Sous cooked on the stove tonight (All week actually) so I could spend time with apprentice on the cold section. Sous did a brilliant job and apprentice is getting to know the menu. I'm probably changing a lot again soon once he is used to it!
