Scarborough Fair Focaccia.....
.....before the last of it disappears for lunch (POST-LUNCH EDIT: chunky slices, rubbed with a clove of smoked garlic, lightly toasted, topped with tomatoes and sliced brie, dribbled with lashings of balsamic dressing). It was/is delicious but I think I maybe overdid the rosemary......
I didn't actually use a recipe, being one of those 'dump it in the bowl/yeah....that looks about right' cooks, but this one is pretty close with the addition of a large handful of fresh, chopped herbs (parsley, sage, rosemary and thyme of course!) to the actual dough.....I added them before the liquid ingredients.
Starting to feel a bit peckish........
