Local honey
Mead Colorado celebrated Community Day. I was asked to be a parade judge. There were 20 participants. The parade lasted maybe 10 minutes. Meandering around the various booths we strolled up to this honey booth. I kept bees for 34 years and it was nice to see a raw honey product. For those of you who don't know what to look for in buying honey, let point out a couple of things. You most likely observed the white foam on top of the honey. This is caused by air. When the honey is spun inside of the extractor it creates air movement. If you spin the extractor fast, you get air which is what I suspect in this case. Another way is if honey is cold it takes longer to spin the honey from the honeycomb cells. This too creates bubbles. It is still a raw product. So if you see this, it is nothing to be concerened about.
