Pickled ginger

I am about to pickle some ginger to go with my salad for work tomorrow. I have some left over sticky rice from last night and there is a lonely frozen tuna steak that is too small for a main meal so I am going to fry that up to go in with the rice and veg. This is my first attempt at pickling anything but Google seems to think I can do it in a day as the slices of ginger are wafer thin.
Also today we are off for an Indian for Mike's aunties birthday so i had better get dressed soon!
