Breakfast recipe #2

This mornings breakfast was another delight.
It was inspired from a small amount of left over mash potato from last nights dinner.

We made fried mash potato cakes ( I believe there is a technical term for this but it escapes me at the moment.)
We just added cheese to them. The mash consisted of potato, squash, carrot and seasoned with garlic, chives and black pepper.

It was served with a fried egg on a bed of diced mushrooms and cherry tomatoes which are pan fried with a dash of honey, laid out on a slice of whole wheat toast.

Throw in a handful of breakfast sausages to keep the meat lovers happy and garnished with s sprinkle of chives.

Rather tasty if I do say.
