Cassoulet in the making

These are the haricot blanc, pancetta and pancetta rind for the cassoulet. I boiled the beans and discarded the liquid after. Then I cooked them with carrot, onion and celery sweated in duck fat and also added tomatoes. I read somewhere that traditional cassoulet doesn't have tomatoes in it but I have never seen it without. I will add the meats to order when I warm it up. I haven't tried it yet and am looking forward to it tonight.
