Automatic vac pac...

Having a kitchen clearout today, found these lurking at the back of the cupboard.

These lentils were bought in a sealed plastic bag but have somehow managed to vac-pac themselves.

My analysis says the lentils absorbed the air inside the packet. Anybody out there know exactly why this would have happened?
