Yellow Lily

Loved the bright yellow of this one.

Made broccoli & cheese soup for supper tonight. I'm a soup lover, and I found this recipe this morning. It was delicious and so fast and easy and makes about 4 cups which is perfect now that there is just the two of us. Here's the recipe:

Broccoli & Cheese Soup

1 (14.5 oz.) can chicken broth
1 (12 oz.) package frozen chopped broccoli
1 cup half & half
2 tablespoons all-purpose flour
8 oz. sharp cheddar cheese, cubed

Place chicken broth and broccoli in a 2-quart saucepan. Cook over medium-high heat until mixture comes to a boil (8 to 10 minutes). Reduce heat to medium. Cook until broccoli is tender (4 to 6 minutes).

Stir together half & half and flour in a small bowl until smooth. Slowly add flour mixture to soup, stirring constantly. Continue cooking, stirring occasionally, until mixture comes to a full boil (2 to 3 minutes). Reduce heat to low. Stir in cheese until melted (3 to 4 minutes).

It was soooo good. Try it!
