The problem with aubergines...
...is that they're delicious, but have an annoying habit of making everything look rather brownish when cooked into a dish. And "brownish" isn't the most photogenic of colours for food... Minor issue. Fortunately, help is at hand in the form of green peppers and red onion, with lashings of parmesan and basil piled on top.
I discovered the other day that my mum had never had risotto (it's not really a prevalent dish where we're from in France), so I made this vegetable risotto today for lunch. She loved it - win!
