Smoking Fish

Summer on the North Sea means Mackerel! Malaysian crew members love them and they love to catch them as well. They can hardly believe catching fish is for us Europeans that easy. Cleaning and smoking them takes a little bit longer however. Yesterday evening our A/B's had a catch of more than hundred of medium seized Mackerel. They cleaned them and waited patiently for the next move.

In Malaysia they do not smoke fish. I don't know why. Last night I made a brine solution to salt the fish. The receipt for brine is very easy, I learned it from an ancient Van Ommeren captain; fill a bucket with water, put a fresh egg in it and pour salt in the water until the egg starts to float. All A/B's were waiting patiently for the egg to come up, they still regard it as sheer magic, with me as their grey Harry Potter. This morning we dried the fish as you can see on the picture, the weather is beautiful so we can start smoking soon. To be continued.
