GONE FISHIN'

Mrs. Poo does a mean Elderberry Cordial! So today its nothing to do with photography but to let you into Mrs.Poo's secret receipe.

35 fresh elderflowers
2 oranges
2 lemons
2oz tartaric or citric acid ( citric preferred )
3 pints of boiling water
3lb granulated sugar
1 camden tablet per gallon made. kill the natural yeasts)

* boil water disolve sugar.
* add orange and lemon slices
*add the elder flower heads ( wash them thoroughly -they have little beastie)
*cover the gastly mess for 48-72 hours
*strain the mixture and leave for another 48 hours
* siphon into another container - leaving the sediment behind
*crush campden tablets ( get them from the wine making shop)
*shake well and leave for another 3-4 hours to settle.
*bottle
* good idea to sterilise the bottles - eg rinse in very hot water.

bit of an effort but well worth it - Its $16 a bottle in the shops. - its got a lovely flaviour and I recommend it when I am fishing !!
