my FAVORITE!!
Came home at lunch today....well, it was about 3:00 so it was actually lunch/dinner...luncher. Made a big caprese salad ala' Cari. I could eat this stuff everyday! And, since I stopped eating meat I practically do! I get the fresh mozzarella from whatever store we happen to go to, usually heirloom tomatoes if I can get them(last night my husband came home with Kumato's "simply unique brown tomato" it says), I like to use fresh basil(and if we get the house we are looking at I will be planting an herb garden with LOTS of basil!) but lately I've been using the jarred freeze dried basil which is actually good and I top it all off with a good balsamic vinegar. Right now I don't have a 'good' balsamic. It's passable. However, I just ordered from Williams-Sonoma the "best balsamic I will ever have". I sure hope so cuz it wasn't cheap. Can't wait to try it!
So, I told you all that because that is what you are looking at. My caprese. The only photo I took today. And, it doesn't look very pretty but it was DEEEELISH!!!! The brown tomatoes didn't bring out the vibrant color I usually have but they were tasty. So, this wasn't about presentation but flavor and I was happy with it!
Tomorrow we are putting an offer in on the house with the Bliptastic back yard! Just got home from work, I'm very tired and I have a teeny headache.
