Apples, 1903 style

We have a huge crop of cooking apples this year. Rather a lot of them had been pecked at, so we are no eating lots of apples as these cannot be stored.

This is a 1903 recipe in "High Class Cooking" for Amber Pudding (usually called Apple Amber I think). The result is very tasty. It's amazing how a little butter goes a long way. I decided to omit the pastry.
