Baked bean bread.....
.....made it (and ate rather a lot of it) yesterday, that's why its not a blip of the whole loaf. If you can get your head round the idea of the baked beans it's a winner! Just in case you want to give it a try......
Mix in a bowl....
500g strong white bread flour
2 x 7g sachets dried yeast
1 tablespoon caraway seeds
1 teaspoon salt
Warm in a pan....
1 (400g ish) tin baked beans in tomato sauce
grated parmesan to taste
1 tablespoon green pesto
3 tablespoons olive oil
I sometimes add a heaped teaspoon minced garlic too, but I didn't have any.
Add the warm, wet stuff to the dry stuff and kneed (adding extra warm water if required) until the dough is smooth and elastic (about 5 mins) Leave to prove in a warm place until doubled in size. Kneed again for a couple of minutes, shape or put into baking tins and leave to rise again. Dust with flour and bake at 220 degrees C for about 25 minutes, the loaf should sound hollow when tapped on the bottom.
Try not to eat it all at once.
EDIT: if you leave out the pesto, cheese and garlic, you'll find the beans just add sweetness and 'body' to the loaf and it's delicious with jam!
