Blue...
Got a little PS happy w/ my sparkling water this morning...just felt like something blue today...reminded me of the waters in Jamaica. So beautiful...clear...and so very blue!
Ocho Rios is truly amazing - its at the northern part of the island...beautiful weather, friendly people, and not to mention the great food. This would be one of my favorite Jamaican recipes...if you cant find jerk paste, regular jerk seasoning works as well. The dish just bursts with flavor! Every single time I make this dish it takes me right back to the island...
JERK CHICKEN PASTA - BAKU
4 skinless chicken breasts
2 tsp jerk paste
12 oz bowtie pasta
1 tbsp olive oil
1 garlic clove minced
1 cup chicken stock
1 tbsp jerk paste
1/2 cup dry white wine
¼ cup chopped fresh cilantro
2 limes
Salt / pepper to taste
½ cup heavy whipping cream
4 springs of cilantro garnish

Rub each chicken breast with jerk paste - refrigerate for an hour. Grill chicken. Cook pasta and drain.
In sauce pan - heat oil and cook garlic for 1 min. Add in chicken stock and 1 tbsp of jerk paste and white wine and cilantro and juice of 1 lime and salt and pepper. Bring to boil - reduce and add in cream. Cook until mixture thickens (5-10 minutes) don't boil! If sauce doesn't thicken (wine hasn't been evaporated) add two tablespoons of cornstarch mixed with two tablespoons of water to thicken.
Add pasta to sauce - toss well. Transfer to serving dish - top with jerk chicken and garnish with cilantro spring and ¼ lime.
