Fettuccine Fun

Is there anything better than a good plate of homemade fettuccine with porcini mushrooms to cheer you up? Yes maybe there is but not available today ;)
Anyway here the fresh egg pasta recipe:
1egg each 100gr of flour, a pinch of salt.
Mix it all to form a dough.
Knead until the dough is very smooth and elastic.
When the dough is silky smooth, shape it into a ball.
Wrap tightly with cling film and leave to rest at least 30 minutes before using.
Roll out as thinly as possible than fold the two sides of the pasta until they meet in the middle.
Cut the rolls into 1 cm strips. Then slide a knife through the middle of the roll and lift to unfurl the pasta strips. Leave the stripes to rest for 1-3hr.
