Ruairidh has turned 16 today.
So it goes without saying that I am baking him a luscious chocolate cake. He's only recently decided he liked cake, in previous years other things have stood in but we were given this recipe recently and he loves it.

Recipe for Mo's never-fail chocolate cake
250g butter
440g caster sugar
4 eggs
250ml milk
310g self raising flour
2 teasppons baking powder
4 tablespoons cocoa powder
1 teaspoon vanilla extract
Preheat oven to 180° (350°/gas 4), grease and line a 20 x 30 cm cake tin (or equivalent capacity round tin)
Beat all the ingredients together. You can do this all at once but I prefer to beat butter and suager then add ingredients one by one. Pour into cake tin and bake for 40 to 45 mins or until skewer comes out clean. Leave to cool in tin for 10 mins before transferring to wire rack. Ice when cold.
Icing -
300g Icing sugar
4 tablespoons cocoa powder
2 tablespoons soft butter
Sift together icing sugar and cocoa powder. Add the butter and 3 to 4 tablespoons of warm water. Beat until smooth and fluffy, adding more water if necessary.
