Thursday's lunch

This is today's lunch, and it turned out absolutely fabulous! No recipe, just my own mind and what was in my kitchen.
Here's how it goes:

Stir together crumbled goats cheese, grated lemon peel, a squeeze of lemon juice, a small amount of honey (to balance the acidity), some nice e v olive oil (about the same amount as the lemon juice), salt (if needed) and pepper.
In a dry and hot pan, roast pine kernels, pumpkin seeds and pistagios. (Or whatever other seeds and/or nuts you fancy)
Boil beetroots until soft, remove the peel with the help of cold water, slice while hot.
Put it all together as seen in the pic.
Tadaa!
