Sirloin

In the 15th century they would sing this carol.....

The boar's head in hand bring I,
Bedeck'd with bays and rosemary.
I pray you, my masters, be merry
Quot estis in convivio (Translation: As many as are in the feast)

Four hours to go of gentle simmering at 170F.

And now, not a Boar's Head - and definitely not a turkey, although I do enjoy one with all the trimmings.

But today a joint of sirloin.

While you're waiting - "sirloin" - the word comes from the Middle English "surloine"
which means "above the loin". Don't believe all those romances about joints of meat being knighted by hungry kings!
