Florentines, Ottolenghi style

I made a raspberry jelly for last night's supper served with raspberries and blueberries cooked in a whisky sugar syrup. I also made these biscuits, but didn't quite cook them enough so they were chewy.

A few more minutes baking today, and they're perfect.

Such an easy recipe, egg white, sugar, orange zest and flaked almonds. They are very more-ish you could easily eat the whole lot yourself!
