Coconut Cream
Samoa is a very religious country and on Sunday everything grinds to a halt. Except for the church and the family umu.
An umu is the traditional way of cooking. Build a fire, heat up some stones, cook the food on the stones. Typically this includes taro, breadfruit, and maybe a pig or chicken.
We asked to watch the umu preparation and very kindly were allowed- it was awesome. So much (hot) work carried out (unusually) by the men. Unusually as the women do most of the work, so they say ;-)
Here's "Morlay" (I need to check the spelling) making coconut cream from fresh coconuts. Scrape the flesh and squeeze it. So yummy compared to the canned stuff!
