Fourme d'Ambert
Blue Cheese, you either love it or hate it a bit like Marmite.
This is Fourme d'Ambert from Mellis cheese shop in Stockbridge. It is one of France's oldest cheeses dating back to Roman times. and comes from the Auvergne region of France.
A likeness of the cheese can be found as a sculpture above the entrance of the medieval chapel in La Chaulme.
The blue comes from the blue-grey colour of the mould which grows after it has been injected into the curd once it has been formed.
This is a slightly milder version of a blue cheese. I will have to confirm that later this evening.
In my opinion the best way to enjoy the cheese is with oat biscuits and a glass of port, but thats just me
