Mushroom Risotto

I cleaned out my freezer today and pulled out some vegetable stock along with everything else. I left it out to thaw, and decided it was a risotto kind of night. Risotto for one is a fun dish to cook, and I puttered around the kitchen and cleaned and baked up a batch of granola in between stirring and adding more stock.

Shallots, garlic, thyme, shiitake mushrooms, finished with lemon juice and parmesan cheese.
