Marmalade

This is a bit of an emergency blip, as today hasn't been a great one for blipping opportunities. But these jars have been sitting in the kitchen for the last two days waiting to be labelled: the results of our visit to La Fête de la Bigarade on Sunday. I'm pleased with the way it turned out, but making marmalade is messy and a lot of work, even using Fiona's easy recipe! But for once my peel didn't all float to the top, because I remembered to turn the jars.

To the man at the orange stall, asking how much marmalade you can make from 10 kg of oranges: my 2 kg of oranges, 2kg of sugar, and 2 lemons made eight randomly sized jars, about 2.5 kg at a rough guess. When you think about it, not an awful lot of the oranges ends up in the marmalade :) Some evaporates, the squeezed-out pulp is thrown away after boiling it for the pectin content, and only the laboriously chopped peel and lovely juices go into the jars.
