One parsnip or several?

I have been presented with this specimen from the garden! Mike was digging one up for my neighbour, she got a lovely big, straight parsnip. I got this. I'm not quite sure where to start so for the moment it is sitting on the table outside being washed by the rain which continues to fall. Miserable morning, not sure that I will get much chance to go outside. I suppose I could always make parsnip soup!
