Vegetable medley

Pheasant for Sunday lunch today - one we froze earlier. I'm prepping vegetabes. They look quite a lot for two people but some will go inside the pheasant, some we'll eat with the pheasant, some will go in the soup, some will flavour the stock along with the pheasant carcass to add to the soup and the vegetables left in serving dishes after lunch will be mashed up to go in the soup too! When I cook I like to achieve several things at once. A pan of soup is lunches sorted for a few days.
Mashed celeriac with cream makes the soup extra nice, I think.
