This is for Ian who took me on as Saturday boy on the market and taught me how to fillet.
He would take all the excess off a fish I had done and weigh it to show me the waste.

Sadly he was on a plane that crashed on Jura on a fishing trip.

Every time I fillet a fish I think of him.
