Sesame in B&W

Lunch today was at a Japanese Katsu House. What was ordered were Korobuta pork Katsu and Seafood Katsu. A bowl of black and white toasted sesame seeds is given to each one of us. The seeds are gently grinded with the wooden pestle in a circular motion against the sides of the bowl. A shoyu sauce is then poured in and mixed to make a delicious sauce for the katsu.
