Progressing from Rock Cakes
After the enormous success of my making rock cakes I decided I should try a sponge for Marlane for Mothering Sunday. Cake of all descriptions is her favourite but she is particularly fond of a Victoria type sponge cake.
This one has seedless raspberry jam and fresh whipped cream on the inside and whipped cream and fresh raspberries on the top.
Came out quite well apart from a little sticking in the tin and had to ease both out with a fish slide and fill in a bit but it's on the inside so not noticeable!
